Aligote is the lesser-known white from Burgundy and struggles to achieve the heights of Chardonnay. With the right winemaker at the helm though wines can rival Chablis for a mineral expression that verges toward smoky. This is a really lovely version that adds fresh apple skin textural weight making it perfect with goat’s cheese tarts.
